Today's Recipe: Hearty Kale Soup!
You know the end of the season is here when fresh kale and green tomatoes are what you find at the local organic farm stand. So with a beautiful bouquet of fresh kale comes hearty kale soup.
1 pound of kale chopped, 2 med onions chopped, 3 large potatoes peeled and cut into small pieces, olive oil, 5 cloves garlic chopped, 2 bay leaves, 1 small zucchini,1 can kidney beans, 1 can diced tomatoes, 1 pound sausage of your choice, 1 quart chicken broth.
Heat oil in a deep pot. Add onions, potatoes and sausage. Cook about 5 minutes, stirring occasionally.
Add garlic, bay leaves and kale to the pot and cover letting the greens wilt. Season with salt and pepper. Add beans, tomatoes, and broth to the pot and heat to a boil. Reduce heat and cook until potatoes are tender. Soup is ready to eat with a big piece of warm crusty bread.
